Perfectly Roasted Carrots
If there is one thing I never get sick of eating or cooking, it’s roasted vegetables. I think there are so many possibilities in flavour and texture when roasting veggies, it’s amazing what you can come out with when you have fresh produce paired with the right spices and sauces. These roasted carrots are my go-to side dish that are incredibly rich in flavour, they make the perfect addition to so many different meals!
One bag of rainbow organic carrots
3 tbsp of olive oil
1 tbsp of maple syrup
1 tbsp of sumac
1 teaspoon salt
1 teaspoon freshly ground pepper
3 tbsp fresh dill
5 tbsp tahini
Preheat oven to 425 degrees F. In a small bowl whisk together the olive oil, maple syrup, sumac, salt and pepper. Pour over the carrots on a sheet pan and toss to coat evenly. Roast in the oven for 30-35 min, until the carrots are tender and browning on the corners.
Finish with dollops of tahini and sprinkle with fresh dill.
*Note: you could use regular carrots instead of rainbow carrots but the timing will be different than this recipe since regular carrots are usually bigger. I find the rainbow ones to roast perfectly and are much sweeter in flavour.
