Spring Salad Recipe

The other week we stayed at a very cute Airbnb but the kitchen was not well equipped and unfortunately did not have a working oven. I usually book Airbnbs so that we have the option to stay in and cook so I was a little disappointed when I found out. However, it just meant I had to think a little harder and see what I could come up with that didn’t require an oven! We ended up buying lots of different spreads, like hummus, red pepper and pesto sauces with crackers, breads and veggies to make a delicious spread with some wine. To finish it all off I made this fresh Spring salad that has so much flavour in it, you have to make it next time you’re on salad duty…

This salad is one of my go-to salads when company is coming over because it feels a little fancier than your regular green salad. Don't worry though it's still simple enough to whip together but it really hits all the right flavour notes! The citrus works so well with the glazed walnuts and the salty feta with the peppery arugula are the perfect companions.

1/2 cup Walnuts โฃ
1/4 cup Honeyโฃ
1/8 tsp Sea Saltโฃ
1 Blood Orangeโฃ
1 Regular Orange โฃ
1/4 cup Fetaโฃ
1 large Bag of Arugula โฃ
1/4 cup Fresh Peasโฃ
1 Whole Endive, slicedโฃ
Salt and Pepperโฃ

๐…๐จ๐ซ ๐ญ๐ก๐ž ๐‡๐จ๐ง๐ž๐ฒ ๐—ช๐š๐ฅ๐ง๐ฎ๐ญ๐ฌ:
Preheat a dry pan over a medium-high heat. Add the walnuts, honey and salt. Cook, stirring frequently, until honey is caramelized and nuts are toasted, about 3-4 minutes. Set aside on a flat surface with parchment paper.

In a small bowl whisk together the juice of the regular orange, 4 tbsp. olive oil, 1/2 tsp salt and 1/4 tsp pepper. โฃ 

In a large bowl pour dressing over arugula, peas & endive and toss to coat. Lay on a large plate.โฃ Cut out blood orange segments and scatter over salad, crumble feta on top and sprinkle with honey walnuts. โฃ
