Smashed Chickpea Salad

Say hello to your new favorite lunch! This chickpea salad has those same flavors as chicken or tuna salad but is completely vegan friendly. It’s so fast to whip up and a great staple to keep in the fridge for busy days. Make a sandwich out of it or throw it in a salad, either way I know you’ll love it.

Smashed Chickpea Salad ⁣

Ingredients: ⁣

1.5 cans of chickpeas (drained and rinsed)⁣
3 celery stalks, diced ⁣
1 shallot, diced⁣
2 tbsp fresh dill ⁣
3 tbsp. vegenaise⁣
Juice of 1 lemon⁣
1 tbsp tahini ⁣
1 tbsp nutritional yeast⁣
salt and pepper⁣
pea shoots or sprouts⁣
Your favorite bread⁣

 

 

Directions:⁣

Smash chickpeas in a large bowl⁣. Add all your ingredients, mix to combine.
Spread on your favorite bread. Add pea shoots or sprouts. ⁣
