If you travel and like to eat, these granola bars are going to be your new best friend. These healthy treats have become my life saviour when travelling around lately because I absolutely hate (and I don’t use that word very often) all airplane and most airport food. I can’t get on board (literally) with anything that comes hot out of a cardboard box, which is why I always bring my own food when travelling. Especially when I fly home to Canada, I seriously prep a dinner and lots of snacks because the last thing I want to feel on a 10-hour journey home is bloated, swollen or hungry. A hungry person who lands is never a pleasant person to pick up from the airport — I have my family in mind here. These granola bars are packed with protein from the almond butter and walnuts, sweetened with honey, and with an added bit of a tartness from the golden berries. Oh, and they’re gluten-free. A new essential in your carry-on.
Almond Coconut Granola Bars (gluten-free)
3/4 cup chopped walnuts or almonds
1/4 cup gluten free oats (if you can’t find gluten free, use regular or omit all together and use 1/4 cup more of nuts)
1/2 cup coconut flakes
1/4 cup almond butter
1/4 cup + 2 tbsp. honey
1/4 golden berries
Preheat the oven to 400 degrees F. Prepare a 6×6 inch pan with parchment paper.
In a medium bowl, combine all of the ingredients together. Spoon mixture into prepared pan and flatten with another piece of parchment paper to evenly distribute.
Bake for 12-15 minutes. Remove from oven and let cool for 20 minutes before slicing.
