Market Fresh Salad

This is my go to meal for a good balanced dinner that doesn’t leave you hungry! 

 

Market Fresh Salad 

Field Greens / Arugala

Cherry Tomatoes

Yellow Pepper

Cucumber 

Roasted Almonds 

Roasted Chicken ( choose your favourite recipe)

 

Dressing

1 tbsp. honey dijon

1 tsp. honey

1/8 cup balsamic vinegar

1/4 cup olive oil 

Mix all ingredients together until thick 

 

Herbed Sweet Potatoes

Preheat oven to 425 degrees 

Cut 1 sweet potato into 1/2 inch thick slices 

Toss them in 3 tbsp. olive oil and 2 tbsps. thyme or rosemary 

Bake for 25-30 min

 

Roasted Garlic 

Cut the top 1/4 of  a head of garlic off 

Drizzle with olive oil and salt and pepper 

Wrap completely in foil and place beside sweet potatoes in the oven for about

30-40 min
