Mango Chia Seed Parfait

This healthy and delicious mango chia seed parfait topped with bananas and sprinkled with coconut flakes and goji berries is the perfect way to start your day and switch up your breakfast routine. Best of all, it combines two superfoods and requires no more effort than your average morning fix.

 

Ingredients

3 tbsp chia seeds

1 cup plain yogurt

¾ cup mango yogurt  (if you can’t find mango yogurt, blend 1 fresh mango with ¾ cup plain yogurt)

chopped bananas

2 tbsp. real coconut flakes

Goji berries for sprinkling

 

Directions (two servings)

Before bed mix chia seeds and plain yogurt together. Cover and put in fridge.

When you wake up your yogurt and chia seeds will be nice and thick. Start layering your parfait, alternating the mango yogurt with chia yogurt. Top with sliced bananas, fresh coconut and goji berries.
