Date and Fig Coconut Rolls

I usually need to keep something in my purse in case of emergency hunger. I absolutely hate the feeling of being hungry on the go surrounded by only unhealthy food options… that is my nightmare. It’s also moments like this where all self control can easily go out the window and you get in a situation where you’re eating way beyond your usual calorie/sugar/fat/salt intake.

Both of these reasons are why I keep these date and vegan coconut rolls in a little baggie on hand. You can buy a similar version at certain grocery stores, but they are seriously overpriced and never as fresh. It’s such a simple recipe and process; whip up a batch in under 10 minutes and you’ll be forever grateful the next time you’re on the go.

Date and Fig Coconut Rolls

½ cup dried dates
¾ cup dried figs
½ cup walnuts
1 tbsp. coconut oil
½ cup fresh shredded coconut

Directions:

1. Blend everything together except the shredded coconuts. Blend until mixture forms a ball/paste, about 3-4 minutes.

2. Grab a small about of the mixture and squeeze slightly, then roll between the palms of your hands to form a little roll.

3. Roll in coconut shavings. Store in an airtight container. Store in the refrigerator to keep them fresh longer.
