Hello healthy summer treat! It’s something about those hot summer days that brings your sweet tooth out and in full force. Now, in the perfect world I would eat ice cream every day and there would be absolutely no down falls, unfortunately that isn’t the reality. I needed to find something easy, cold and delicious to grab when that craving kicked in and tah-dah, out came these blueberry honey yogurt popsicles from my kitchen! I had never made popsicles before so naturally the task intimidated me a bit, however I was pleasantly surprised about how easy it was. I can’t wait to try making all different types of flavours now – just picked up raspberries today for another round. These popsicles are tart, sweet and fresh – the perfect healthy treat for a hot day.
Blueberry Honey Yogurt Popsicles (makes 6)
1 1/4 cup of plain or greek yogurt
1 cup fresh or frozen blueberries
2 – 3 tablespoons honey (depending how sweet you want them)
1 vanilla bean (split and scraped)
Blend everything together and pour into popsicle moulds. Place popsicle stick in and place in the freezer for several hours!
