Banana Date Raspberry Smoothie
You already know how much I love a good smoothie – usually right after the gym or in between meals to keep my day balanced. I changed things up a bit this time and blended certain ingredients separately to create a three-layer smoothie instead of mixing everything together. I kept the raspberries half-frozen, only leaving them out to thaw for a short amount of time before smashing them with a spoon. I love the unique frozen yogurt texture this created, and ditching the straw to opt for a spoon was a fun touch.
INGREDIENTS (makes 1 large smoothie or 2 smaller smoothies)
1 cup frozen raspberries, slightly thawed
2 tbsp. coconut flakes
1 cup almond milk
In a jar, smash raspberries with the back of a spoon. Leave some pieces chunky.
In a blender, blend 1/2 cup almond milk, 1 banana, 2 dates, 2 tbsp. coconut flakes. Pour over raspberries.
In the same blender (you don’t have to wash it), blend 1 banana and the remaining 1/2 cup almond milk. Pour on top of banana-date layer. Top with a few raspberries and more coconut flakes. Enjoy!
